Also known as humpback or humpie salmon, Pink salmon is very similar to keta salmon in terms of its mild taste and perception as a lower-grade wild salmon. Aside from the color, the biggest difference between pink and keta salmon is the texture; pink salmon isn’t as flaky. So, while pink salmon may be viewed as a lower-quality salmon for standalone fillets, the softer flesh and milder taste can make it a high-quality ingredient for soups, stews, and casseroles. Pink salmon migrate almost immediately to the ocean as they develop. In the ocean, they eat plankton, small fish, squid, and aquatic insects.
This is the most abundant, widely-caught salmon in the Pacific Ocean. In 2018, it’s estimated that only 70 million humpback salmon were caught—about half the number that was harvested the year before. This one-year decline of pink salmon almost entirely explains the 34 percent decrease in the Alaskan salmon market overall. Even still, there is a robust market for pink salmon. And because of the two-year life cycle of this species, there are expected fluctuations between even and odd-numbered years. The average pink salmon is about 18-25 inches long and weighs between 3-5.5 lbs.
